I’ve been several times to a Japanese place called Higuma for the gyoza, or Japanese dumplings. They are very good. They have those huge bowls of soups filled with all sorts of things but my favorite remains the dumplings. I love to sit at the counter and watch the operatic performance of the chefs putting it all together.
There’s always a line outside.
Here is the guy making the gyoza. That’s all he did, over and over again, steaming them first and then letting them get brown and crispy on the outside.
Lots of rice is prepared, mostly for fried rice.
There were two chefs making the other dishes. Sometimes fire would leap up but I wasn’t able to get a photo of it, just the steam.
Here’s the finished product. Just looking at this photo makes me hungry. I think I’ll make another trip there soon.
